The olive oil elaboration plant is equipped
with three cutting-edge continuous centrifuge
systems with a capacity to process 750,000
lbs of olives a day. Once harvested, olives
are ground within the first 24 hours to
ensure the best quality oil, and then stored
in stainless steel tanks. |

parts of the world to start the plantations.
Cuttings were cloned in our own tree nurseries
to ensure the success of plantings; and,
this method guarantees the quality and
uniformity of the oils in all harvests. |

A team of agricultural engineers is responsible
for the management of the olive plantations
that includes 532,539 olive trees of different
varieties: Arbequina, Manzanilla, Frantoio,
Picual, Arbosanna, Changlot Real, Coratina,
Barnea among others. This diversity of
the olive plants, together with a carefully
planned plantation system, makes possible
the strengthening of both varietals and
mixed oils.

The area is
characterized by a special climate, with
little rainfall and the necessary daily
temperature variation. Our state-of-the-art
drip irrigation systems allow monitoring
the water for each olive tree.
Weather stations provide computerized monitoring
of all cultivated areas.
Once the olives are harvested, they are carefully
transported to the processing plant in bins
in order to preserve the fruit in the best
possible condition to be pressed. |
